Mercado Revolution Aspires to Bring Culinary Change to Buffalo

Jeremy Horwitz, founder of popular local dining review site Buffalo Chow, and Buffalo native, Chef Scott Kolling recently announced their dream to bring a new culinary vision to the area in the form of the classic European food market.

The Mercado Revolution is simple in concept, but intricate in just how it will be the game changer that the area needs.  Their vision includes a vast marketplace that will house various chefs and artisans doing what they do best, restaurants that will be destinations, and a common community space where people can interact.

Instead of me trying to explain, check out the video below for a detailed explanation of their vision.  Also, be sure to browse their Kickstarter page for information on how you can help make this dream come true.

Will this grand vision work in Buffalo?  We'll know by the end of the year, but one thing is certain; Jeremy and Scott bring a refreshing perspective to the table, one that is creating buzz and hope for the area.
